Broccoli and Lentil Burger :
This is a quick healthy and vegan alternative to the classic beef burger. I made it with broccoli but you can also use courgette, carrots or cauliflower. I like to serve this dish with some sliced avocado and a little bit of tahini on top. I used lentils because they have many health benefits, its high level of soluble fiber can help to reduce cholesterol, improve the digestive system and lower the risk to develop heart diseases. In addition lentils contains a super high level of protein and very low calories, therefore this dish represents a super light and fulfilling meal.

Avocado is my favorite fruit, I truly love it and I can literally have it everyday with my quinoa, salads, veggie noodles, breakfast smoothie or simply on brown toast in the morning. Avocado is also called the alligator pear because it has a pear shape and its rid is very similar to the skin of an alligator. This amazing berry comes from Latin America and it was first brought to Europe from the Spanish “Coinquistadores” !!!

Butter Bean Salad with Creamy Spinach Dressing :
Yesterday I was wandering around Borough Market with my friend Isabela and I bought a few veggies without thinking too much about it, which is very rare because usually I do my grocery shopping with a very detailed list. I came home with a lot of spinach, pomegranates, tomatoes, carrots, avocados and walnuts. I simply combined a few ingredients together et voila my salad was ready, it took me ten minutes or less to prepare it , therefore this one is the perfect meal to prepare when you don’t have too much time our you are just too lazy to cook. I used spinach because it contains a lot of potassium and iron, that can really help you to stay active and feel energised, but most importantly potassium can really help to lower blood pressure. Spinach is also a very good source of vitamin A and vitamin C. Vitamin A keeps your hair soft and healthy, while vitamin C helps your body to build and maintain collagen.

I’m so excited to share with you the recipe for Meri’s healthy and delicious Carrot Cake made with fresh organic ingredients that you will love. I made this healthy version of a classic carrot cake for my brother’s friends and they all loved it, so I decided to share it with you and I hope you will love it too. I think is the perfect cake to prepare when you have friends or family coming over for dinner, maybe after my creamy broccoli and pea soup or my raw carrot noodles. I know, I’m kind of obsessed with porridge. I love to have something warm and cozy for breakfast, especially during these cold days in Jackson Hole. I’m trying to prepare a different porridge every morning, and I have noticed that I had no sugar cravings while skiing, which is truly awesome. Oats are rich in beta-glucan, a fiber that can lower cholesterol levels, can stabilize blood sugar levels and prevent heart diseases, therefore a porridge is not only a super delicious breakfast but it turns out that it’s also very very good for you!
