Classic Butternut Squash Soup :
Butternut Squash is my favourite veggie, I like to have it roasted, steamed, on my quinoa or mashed as a side of my veggie burgers. This is a very classic and simple recipe that I usually prepare when I have friends coming over for dinner, normally they prefer a squash or pumpkin soup to a boring green broccoli soup. Butternut Squash has a sweet taste so kids love it too, it’s seriously the best option for those people that are not fan of classic veggies. The health benefits of this veggie are several, firstly it has no fats and very low calories. It contains also many vitamins and minerals such as :vitamin A, vitamin C vitamin E, calcium, iron, copper and zinc. Butternut squash is the plant with the highest content of vitamin A which helps to maintain the integrity of skin and mucus and it’s a very powerful anti-oxidant.

Apricot Energy Balls
This energy bites are perfect when you are in need of a pick me up or simply if you want to taste something sweet but totally guilt free. I always make 6-12 of them during the weekend and I keep it in the fridge for about a week, trust me this bites are real lifesaver. I try to keep this recipe as simple as possible but still healthy and full of goodness. I used bee pollen because of its super good taste and its health benefits. It is in fact rich in proteins, amino acids, vitamins and folic acid. The large amount of protein in bee pollen provides you with a high boost of immediate energy, and its antibiotic-type properties can really help your body to fight viruses.

I prefer to use raw cocoa powder instead of cacao powder because it contains much more health benefits. In fact the big difference between raw caco powder and regular cocoa powder is that the first one is cold pressed, therefore it keeps all the living enxymines but it removes all the fats. Raw cacao powder is very rich in antioxidants and it contains loads of minerals, such as :iron, manganese, magnesium, potassium, calcium and zinc.
