Annacarla’s Fusilli | I fusilli di Annacarla

Annacarla’s Penne:

I have to admit that the inspiration for this recipe came to me, after one of the nutritious and fun dinners I had with my dear friend Annacarla. I met Annacarla at UC Berkeley, she is originally from Puglia and she always have amazing recipes to share with me. While we were cooking a bunch of “crostini” with Ricotta and Brussel sprouts chips, she told me that one of her favorite recipe is Whole wheat penne with zucchini, mint and fresh ricotta. I tried it for lunch the day after, and it is just so good that I had to share it with you guys.
