Lazy Sunday Salad

Yesterday I woke up feeling super lazy and tired, I really didn’t wanted to cook something special for lunch. So, after my morning walk with Lampone and a classic avocado toast for breakfast , I went groceries shopping and here’s what I’ve created 🙂

  • Fresh beans (you can make your own quantity)
  • 1/2 onion
  • 1 avocado
  • 1 handful of cherry tomatoes
  • 1/2 cabbage
  • 70 gr of greek feta
  • Extra Virgin Olive oil
  • Salt & pepper

Start by cleaning the fresh beans. Then start boiling water on a medium sized pan, add 1/2 onion, one tbsp of olive oil and the beans.

While the beans are cooking, it should take around 20 minutes, cut the cabbage, tomatoes, feta and the avocado.

Once the beans are ready, drain them and let them cool for a bit.

Combine the beans, cabbage, tomatoes avocado and feta all together. Season with olive oil salt and pepper and serve it 🙂

Questa domenica mi sono svegliata, sentendomi abbastanza stanca e pigra, quindi non avevo nessuna voglia di cucinare qualcosa di speciale per pranzo. Dopo la mia camminata con Lampone e l’avocado toast della colazione, ho fatto un giro dal fruttivendolo e ho preparato la seguente insalata.

  • Fagioli (quantità a piacere)
  • 1 manciata pomodori ciliegino
  • 1 avocado
  • 1/2 cappuccio
  • 1 cipolla
  • 70 gr feta greca
  • Olio extra vergine di oliva
  • Sale e pepe

Iniziate curando i fagioli poi metteteli a bollire con 1/2 cipolla e un cucchiaio di olio.

Mentre i fagioli si cuociono, ci vorranno circa 20 minuti, iniziate a tagliare il cappuccio, i pomodori , l’avocado e la feta.

Una volta che i fagioli saranno pronti, scolateli. Lasciateli freddare un pochino e poi mischiate tutti gli ingredienti insieme. Condite con olio extra vergine di oliva, sale, pepe e servite 🙂
