I came back from Costa Rica one week ago and I had to fly immediately to London to celebrate my graduation in International Business at Hult Business School. I promise that I am going to share with you a post dedicated to my adventures in Costa Rica very soon. It has been a truly amazing journey with my brothers, i simply loved eating fresh tropical fruits for breakfast and spending the day surfing amazing waves, but let’s leave all the details to the next post.

 While I was in London celebrating my graduation with my family, I had the chance to taste a super delicious energy bar in a little vegan restaurant in Notting Hill, I try to recreate it in my kitchen and here’s the recipe for you. To celebrate International Hummus Day I decided to share with you one of my favourite recipe : my healthy hummus.I personally adore hummus because it is so tasty yet fast and easy to make. The best thing about this recipe is that you can keep it in the fridge for 4-5 days which makes it a perfect snack or light lunch. My hummus is mainly made of chickpeas which are really high in plant-based proteins, therefore this is a perfect dish for vegetarians or vegans. Chickpeas are also a good source of fiber,  that can really improve the digestive system and can help the body to flush out the toxins.

This energy bites are perfect when you are in need of a pick me up or simply if you want to taste something sweet but totally guilt free. I always make 6-12 of them during the weekend and I keep it in the fridge for about a week, trust me this bites are real lifesaver. I try to keep this recipe as simple as possible but still healthy and full of goodness. I used bee pollen because of its super good taste and its health benefits. It is in fact rich in proteins, amino acids, vitamins and folic acid. The large amount of protein in bee pollen provides you with a high boost of immediate energy, and its antibiotic-type properties can really help your body to fight viruses.

This is a perfect potato chips substitute, I usually love to eat it as a snack or simply as a side, you can also serve it as a healthier aperitif, maybe with a fresh juice. I like to use a lot of cinnamon for this recipe, trust me on this one: the combination of the sweet taste of cinnamon with the bitterer kale is just amazing, plus cinnamon is really good for you, because it’s rich in anti-oxidants and helps to reduce blood sugar levels.
