I am a very big fan of soups, whenever I have guests coming over for dinner I serve a nourishing and tasty soup as a starter followed by my healthy version of a classic Greek salad or by my signature veggie frittata. This green soup is very easy to prepare and I personally love to add fresh mint leaves to make it more tasty and delicious. Broccoli are a very good source of vitamin K and A, that combined can help the body to keep the vitamin D metabolism in balance. In addition broccoli are very high in vitamin C, that can really help to fight skin damage caused by pollution and sun exposure.
