Last week, my lovely friend and photographer Christina, gave to me a big basket of organic persimmons from her boyfriend’s garden. Persimmon are my favourite Winter fruits as they are very sweet and juicy, therefore they are the perfect ingredient for cakes, compotes and smoothies. Persimmons are relatively high in calories, but very low in fat. These orange round fruits are also a really good source of Vitamins C, antioxidants and dietary fiber. I like to serve my Persimmons Cake for breakfast with a warm matcha tea or as a dessert combined with diary-free vanilla ice cream.

I know that after the Festive Season we all don’t feel like eating sweets, but this biscotti are so delicious that I really have to share the recipe with you guys. Breakfast is my favourite meal, I love to start my day with a freshly squeezed lemon juice, a good workout, followed by a nourishing and sweet breakfast. At the moment I’m back home, in Italy, and I’m baking almost everyday a big variety of cakes and breads for my friends and family. This Pumpkin Focaccia is perfect for a sweet but healthy breakfast, because pumpkin is naturally rich in antioxidants vitamins such as: vitamin A, vitamin E and vitamin C.

Chocolate and Pear Cake:
I love to cook and eat seasonal fruits and vegetables, which is the reason why today I want to share with you the recipe for a very indulgent yet guilt-free cake, made with pears and very dark chocolate. Even if my favourite dessert is my healthy and plant-based crumble, this cake is very satisfying yet light and easy to digest. Dark chocolate is a very good source of fiber and important minerals, such as: iron, magnesium, manganese and zinc.

Pear and Apple Crumble:
I love crumbles, especially because they are very healthy and easy to prepare. I like to change the base of the crumble with seasonal fruits, in the Summer time I normally use peaches and apricots while in Autumn I like to prepare it with apples and pears. Pears and apples are both very high in pectin, a water soluble fiber, that can help the body to lower glucose levels and blood pressure. Pectin can also help to fight constipation and regulate the bowel movement, in addition, apples and pears are naturally rich in vitamins and minerals.

Choco Popcorns :
This is probably the easiest recipe that I have ever posted. My choco popcorns are a very healthy and delicious treat, I like to serve them as a dessert, or when I invite all my girlfriends for a movie night. To cook the popcorns I used coconut oil because of its smoke point, which is much higher than olive oil. Therefore, coconut oil can maintain most of its vitamins and mineral at very high temperature.

Meri’s Halloween Treats:
Trick or Treat ? Well the answer is quite simple : Plant-Based and Gluten-Free treats please !!! This chocolate treats are just so easy to make yet delicious and indulgent, my family loved it so much that I had to share the recipe with you guys. For my Halloween chocolate sweets I used coconut nectar mainly because it has a very low Glycemic Index, precisely 35, compared to white sugar that has a Glycemic Index of 65. Coconut Nectar is also a very good source of amino acids and important minerals, such as: iron, potassium, magnesium and zinc.

Meri’s Nocciolata :
I have been working on this recipe for the past few weeks and now, that I am finally happy with the result, I’m going to share it with you. My Nocciolata is a lighter and healthier version of the classic Nutella and it is super delicious on its own or spread it on gluten-free toast and crackers. The main ingredient of my Nocciolata are organic hazelnuts, which are a great source of vitamin E and B and minerals such as: iron, calcium and potassium.

Cinnamon Cashew Milk:
Cashew milk is my favourite plant-based milk and I like to use it basically everywhere. I add it to my morning smoothie, to my healthy and vegan sweet treats or to my porridge. This recipe is super tasty and very easy to prepare as you don’t have to drain it like classic almond milk. Cashew nuts are really good for you as they have a very low Glycemic Index and they are a super good source of copper and magnesium.

Energy Bars :
I came back from Costa Rica one week ago and I had to fly immediately to London to celebrate my graduation in International Business at Hult Business School. I promise that I am going to share with you a post dedicated to my adventures in Costa Rica very soon. It has been a truly amazing journey with my brothers, i simply loved eating fresh tropical fruits for breakfast and spending the day surfing amazing waves, but let’s leave all the details to the next post.
While I was in London celebrating my graduation with my family, I had the chance to taste a super delicious energy bar in a little vegan restaurant in Notting Hill, I try to recreate it in my kitchen and here’s the recipe for you. It is made of nuts and seeds which are both a really good source of plant-based protein and gluten-free oats which are a really good source of carbs.
