Oat and Chocolate Cookies :
It was such an honor to participate to the fundraising event organized by the “Hult Rise Club” at Hult Business School yesterday. The “Hult Rise Club” organized a delicious breakfast to support the Saath Foundation, which helps children in need. I have to admit that I didn’t expect such a success, but almost everyone loved my vegan, gluten free cookies. Matteo, one of my dearest friend, said that the taste of my cookies reminded to him of his childhood and his grandma’s delicious biscuits. This simply made me feel super happy, because I felt the same way about it and I wanted to recreate my mom’s traditional recipe.
I used loads of almond in this recipe because they are naturally full of goodness. In fact, almonds are rich in flavonoids and vitamin E that combined can reduce the risk of heart diseases and it can really lower the blood sugar and insulin level after meals. In addition the high content of vitamin E can really help to nourish the skin and protect it from UV’s damages.
