Chocolate and Pear Cake:
I love to cook and eat seasonal fruits and vegetables, which is the reason why today I want to share with you the recipe for a very indulgent yet guilt-free cake, made with pears and very dark chocolate. Even if my favourite dessert is my healthy and plant-based crumble, this cake is very satisfying yet light and easy to digest. Dark chocolate is a very good source of fiber and important minerals, such as: iron, magnesium, manganese and zinc.

If you are looking for a healthy and delicious alternative to regular french fries, the recipe for my sweet potato chips is the answer. I discovered sweet potatoes when I moved to London a few years ago and I completely fell in love with their sweet and tasty flavour. Sweet potatoes are not only lower in GI compared to regular potatoes, but they are also full of vitamins and minerals. This superfood is naturally rich in vitamin A, vitamin C, beta-carotene, and when digested, it can help the body to fight inflammations.

Broccoli, Courgette and Mint Soup:
I am a very big fan of soups, whenever I have guests coming over for dinner I serve a nourishing and tasty soup as a starter followed by my healthy version of a classic Greek salad or by my signature veggie frittata. This green soup is very easy to prepare and I personally love to add fresh mint leaves to make it more tasty and delicious. Broccoli are a very good source of vitamin K and A, that combined can help the body to keep the vitamin D metabolism in balance. In addition broccoli are very high in vitamin C, that can really help to fight skin damage caused by pollution and sun exposure. I like to serve this soup with a delicious cashew cream which makes it even more rich and tasty.

Meri’s Nocciolata :
I have been working on this recipe for the past few weeks and now, that I am finally happy with the result, I’m going to share it with you. My Nocciolata is a lighter and healthier version of the classic Nutella and it is super delicious on its own or spread it on gluten-free toast and crackers. The main ingredient of my Nocciolata are organic hazelnuts, which are a great source of vitamin E and B and minerals such as: iron, calcium and potassium.

Butternut Squash and Sweet Potato Soup:
Autumn is probably one of my favourite season , mainly because I love how quickly the leaves turn red, orange and yellow. In Autumn I like to take long walks in the park and buy organic vegetables from the local farmer’s market. My favourite fruits and vegetables of this season, are : butternut squash, sweet potato and apples. The recipe I’m sharing with you today has a very high content of vitamins, such as: vitamin A, vitamin B and vitamin C. Butternut squash and sweet potatoes are also a good source of magnesium and potassium.

Banana and Cacao Smoothie :
Now that the weather is getting colder I prefer to nourish myself with cozy and sweet meals like my Warm Berry Porridge. But sometimes I wake up later than usual and I have to prepare a quick breakfast before running to work or to school. I simply love this banana and cacao smoothie because it has a very “chocolatey” taste, sometimes I even prepare it in the afternoon when I need a quick and healthy snack. I added also some almond butter which is a wonderful source of plant-based protein and vitamin E, that will make your skin glow.

Black Beans and Sweet Potato Burgers:
When I was in New York this Summer I fell in love with By Chloe, a vegan restaurant founded by Chloe Coscarelli, here you can find a great variety of delicious vegan burgers. My favourite one is “The Guac Burger” made with beans, avocado and sweet potato. This weekend I organised a vegan brunch with my girlfriends and I tried to remake it in my kitchen. My version is made with black beans and quinoa, which are both a great source of plant-based protein, and sweet potato, which is a great source of carbohydrates, therefore this recipe represents a nutritious and well balanced meal.

Cinnamon Cashew Milk:
Cashew milk is my favourite plant-based milk and I like to use it basically everywhere. I add it to my morning smoothie, to my healthy and vegan sweet treats or to my porridge. This recipe is super tasty and very easy to prepare as you don’t have to drain it like classic almond milk. Cashew nuts are really good for you as they have a very low Glycemic Index and they are a super good source of copper and magnesium.

Warm Berry Porridge:
In London, the porridge season has officially started. Even if I truly love to have a fresh smoothie in the morning, when the weather gets colder and the sky is grey, I’ll rather have a warm and cozy porridge packed with vitamins and minerals. For this porridge I normally use blueberries, raspberries and blackberries mixed together. Berries are a very good source of vitamin C, that will boost your Immune System.
