Last week, my lovely friend and photographer Christina, gave to me a big basket of organic persimmons from her boyfriend’s garden. Persimmon are my favourite Winter fruits as they are very sweet and juicy, therefore they are the perfect ingredient for cakes, compotes and smoothies. Persimmons are relatively high in calories, but very low in fat. These orange round fruits are also a really good source of Vitamins C, antioxidants and dietary fiber. I like to serve my Persimmons Cake for breakfast with a warm matcha tea or as a dessert combined with diary-free vanilla ice cream.

I know that after the Festive Season we all don’t feel like eating sweets, but this biscotti are so delicious that I really have to share the recipe with you guys. I know I have been a little quiet lately but I really needed to spend some time off technology and social media. Today, I’m feeling energised again and I’m ready to share a new exciting recipe with you guys. This buckwheat and choco bites are gluten-free and plant-based and I like to serve them as a light dessert or as a mid morning snack or even for breakfast with my homemade cashew milk. If you are looking for a healthy and delicious alternative to regular french fries, the recipe for my sweet potato chips is the answer. I discovered sweet potatoes when I moved to London a few years ago and I completely fell in love with their sweet and tasty flavour. Sweet potatoes are not only lower in GI compared to regular potatoes, but they are also full of vitamins and minerals. This superfood is naturally rich in vitamin A, vitamin C, beta-carotene, and when digested, it can help the body to fight inflammations.

I created this delicious granola recipe for my grandma this Summer, and she loved it so much that I have to prepare it for her at least once a month. This granola is very simple to prepare and it is made of a few simple ingredients like oats, nuts and seeds and coconut blossom syrup. For this granola I also used coconut oil, to make it more crunchy and full of healthy fats. Coconut oil is also a very important source of vitamins and minerals, such as: vitamin E, vitamin K and iron.

My Favourite Chia Parfait :
I love Chia pudding because it keeps me full for 4-5 hours which is perfect when I need a nourishing breakfast and I know I will have to keep on going until lunch time. The recipe I’m sharing with you today is quite easy and you can prepare in the evening and leave it in the fridge overnight. For this recipe I used a good amount of cinnamon that can really help to balance blood sugar levels, it is also loaded with antioxidants and it helps the body to fight infections and repair tissue damages.

Cinnamon Cashew Milk:
Cashew milk is my favourite plant-based milk and I like to use it basically everywhere. I add it to my morning smoothie, to my healthy and vegan sweet treats or to my porridge. This recipe is super tasty and very easy to prepare as you don’t have to drain it like classic almond milk. Cashew nuts are really good for you as they have a very low Glycemic Index and they are a super good source of copper and magnesium.

MInty Quinoa Salad:
You probably know that I love quinoa and that I like to mix it with fresh seasonal veggies. This time I decided to make a Summery version of a simple quinoa salad, with fennel and mint. Fennel is a very good source of iron, phosphorous, calcium, magnesium, manganese, zinc and vitamin K which can really improve bone health. If you suffer from digestive problems fennel is really good because of its high fiber content that helps to fight constipation and promotes regularity.
