Breakfast is my favourite meal, I love to start my day with a freshly squeezed lemon juice, a good workout, followed by a nourishing and sweet breakfast. At the moment I’m back home, in Italy, and I’m baking almost everyday a big variety of cakes and breads for my friends and family. This Pumpkin Focaccia is perfect for a sweet but healthy breakfast, because pumpkin is naturally rich in antioxidants vitamins such as: vitamin A, vitamin E and vitamin C.

My Favourite Chia Parfait :

I love Chia pudding because it keeps me full for 4-5 hours which is perfect when I need a nourishing breakfast and I know I will have to keep on going until lunch time. The recipe I’m sharing with you today is quite easy and you can prepare in the evening and leave it in the fridge overnight. For this recipe I used a good amount of cinnamon that can really help to balance blood sugar levels, it is also loaded with antioxidants and it helps the body to fight infections and repair tissue damages.
