Healthy Mini Doughnuts:

This week I have been working on new creative recipes for you guys. Today I am going to share with you my healthy doughnuts. I tried this sweet treats for the first time at the Healthy Being Juicery in Jackson Hole (Wyoming, U.S.A) and I immediately felt in love with it. I tried to recreate it in my kitchen , and my favourite version of it is the one I am sharing with you today, made with coconut and raw cacao powder. I used cashew nuts because they are super healthy and delicious, cashew nuts contain the best fat ratio 1:2:1 for saturated, monounsaturated and polyunsaturated. These nuts are also a super good source of magnesium which helps to lower blood pressure and to fight muscle spasms and headaches.

This is simply the perfect recipe to prepare during the weekend. I love to wake up on Sunday mornings and have my coconut bread with hazelnut spread. It’s just the perfect way to wake up and then maybe go for a walk at the park or to the flower market. I prepared it the first time for a typical family style Sunday brunch, since all my family loved it I decided to share it with and I hope you will find it pretty amazing too. I normally use buckwheat flour in my sweet treats because it is gluten free and it contains many vitamins and minerals. In fact buckwheat is rich in phosphorus, copper and manganese that helps to stabilize blood sugar levels. In addition it contains vitamin C and Niacin that assists with healthy circulation and supports the nervous system.

You are most probably wondering why coconut oil is a basic ingredient in my recipes, especially in my soups, sweet treats and snacks. Coconut Oil has numerous properties, such as : saturated fats, unsaturated fatty acids; vitamin E; vitamin K and iron.

The unsaturated fats in coconut oil differs  from others and more in general plant-based ingredients are totally different from animal-based unsaturated fats that can be really harmful for your body.

One of the most important benefits of coconut oil is its content of lauric acid and other medium chain triglycerides that can really help the body to eliminate harmful bacteria, fight the signs of aging and most importantly it helps the body to absorb vital nutrients and minerals.

I know, I’m kind of obsessed with porridge. I love to have something warm and cozy for breakfast, especially during these cold days in Jackson Hole. I’m trying to prepare a different porridge every morning,  and I have noticed that I had no sugar cravings while skiing, which is truly awesome. Oats are rich in beta-glucan, a fiber that can lower cholesterol levels, can stabilize blood sugar levels and prevent heart diseases, therefore a porridge is not only a super delicious breakfast but it turns out that it’s also very very good for you!

Blueberry Coconut Porridge :

This is simply my favorite breakfast recipe, i love the combination of the juicy blueberry with the crunchy coconut flakes. Coconut is very rich in dietary fiber and has a very low glycemic index, it helps to fight constipation and it will reduce your sweet cravings.
