Hello everyone, as I told you last week I’m super busy studying so I don’t have a lot of time to post new recipes for you, but I’m trying to cook new healthy dishes during my study breaks. Yesterday, I came up with a new healthy recipe for Matcha Green Tea cookies. Matcha Green Tea is the highest quality green tea available and it contains loads of antioxidants, such as : Cathechin which has fighting cancer properties. This type of Green Tea can also stimulate the production of dopamine and serotonin that can really boost our memory and concentration.

I’m so happy to share with you one of my favourite recipes : gluten free and healthy brownies made with fresh organic ingredient. I truly love them, especially when combined with coconut or vanilla ice crea (mm so delicious !!! )
I prefer to use raw cocoa powder instead of cacao powder because it contains much more health benefits. In fact the big difference between raw caco powder and regular cocoa powder is that the first one is cold pressed, therefore it keeps all the living enxymines but it removes all the fats. Raw cacao powder is very rich in antioxidants and it contains loads of minerals, such as :iron, manganese, magnesium, potassium, calcium and zinc. In addition raw cacao powder can reduce blood pressure and it can reduce the risk to develop cardiovascular diseases and strokes

Banana Pancakes : I prepared my first pancakes when I was 16 years old and since then I have been trying many different types : blueberry pancakes, chocolate chip pancakes, and banana pancakes, my favorite!!! To celebrate Pancake Day, I decided to share with you my healthy recipe for the traditional banana pancakes, made with healthy organic ingredients like oats, almond butter and bananas of course. Meri’s Apple Pie:
Today I want to share with you my signature apple pie. I love apple pies, seriously it’s my favorite treat. The recipe that I’m sharing with you today is a healthy version of my grandma’s one. She used to prepare it for me and my brothers when we were kids and I just loved it, she normally used apples from her garden that made her pie even more delicious. Apples are so good for you because they are a good source of vitamins and minerals and they help to detoxify your liver!!!

Carrot Noodles with Avo Cream :
This recipe is a healthier substitute of noodles or spaghetti as it is gluten-free, carbs-free and of course guilt-free. Is very easy to prepare it and trust me is just a super delicious dish. I simply love the combination of the natural sweetness of carrots with the creamy taste of avocado. I literally adore Avocado because it has so many benefits that most are unaware of. First of all Avocado is a low-carb food with a high source of fiber and vitamins such as : vitamin K, vitamin C and vitamin B. Most importantly it is a source of Omega-9 which helps to repare damaged cells and it makes your skin healthy, soft and beautiful.

This is the perfect “on the go” salad, you can easily prepare it the night before and enjoy it during your lunch break. Plus quinoa is the best whole grain food that you can find, in fact is naturally rich in protein ( 8 grams for one cup of quinoa) fiber (5 grams for one cup of quinoa) and has a very low glycemic index, which will make you feel full longer.

Kale Crisps :
This is a perfect potato chips substitute, I usually love to eat it as a snack or simply as a side, you can also serve it as a healthier aperitif, maybe with a fresh juice. I like to use a lot of cinnamon for this recipe, trust me on this one: the combination of the sweet taste of cinnamon with the bitterer kale is just amazing, plus cinnamon is really good for you, because it’s rich in anti-oxidants and helps to reduce blood sugar levels.

Healthy Chocolate Mousse :
My first “sweet treat” on this blog, is a very creamy chocolaty yet healthy mousse. Cacao is naturally rich in antioxidants, sulfur, magnesium, iron and theobromine, which is a stimulant that can treat depression. I use only raw cacao powder as it maintains all the nutrients because is made of cold pressed non-roasted cacao nibs.
