Chocolate and Pear Cake:

I love to cook and eat seasonal fruits and vegetables, which is the reason why today I want to share with you the recipe for a very indulgent yet guilt-free cake, made with pears and very dark chocolate. Even if my favourite dessert is my healthy and plant-based crumble, this cake is very satisfying yet light and easy to digest. Dark chocolate is a very good source of fiber and important minerals, such as: iron, magnesium, manganese and zinc.

Here in Italy I have a nice garden where my father grows loads of veggies and aromatic plants like mint and rosemary. Since I truly adore fresh mint I love to add it to every single dish or to my iced drinks. When I need inspiration for my recipes, I like to walk trough our garden and pick random vegetables, then I try to combine them together and create new healthy dishes. Yesterday I decided to cook our aubergines with apricots and fresh mint, I loved it so much that i decided to share the recipe with you.

I personally love veggie burgers, therefore I decided to create a lighter version of my Lentil Burgers. made with courgette and spelt. Courgettes have a very high level of potassium and vitamin C, they are also really low in calories and high in water content.

Yesterday evening I organised my first “Organic Meri’ dinner with my closest girlfriends. I really love my new flat, because it has a bright and spacious dining room and the most practical and comfy kitchen.  I decided to dedicate a blog post to our menu, because I  think that planning and organising a dinner is not very easy. When I invite friends or family to have dinner at mine, I always try to serve fresh and healthy dishes and make my guests feel satisfied and happy.

I know I have been quiet for the past two weeks but I went back home for Easter and I couldn’t cook as much as I wanted too. I came back to London  a few days ago, and I moved to a new flat, which is simply perfect! My new kitchen is much better than the old one and today I finally started to cook again.

The recipe that I am sharing with you is very simple, you can prepare it in the morning and have it on the way to the office or to school.  I like to eat my smoothies with a spoon rather than drinking it but you can add a little bit of water to my recipe and it becomes immediately more liquid.

This is seriously my favorite fast and easy smoothie, I used pineapple, which is a really good source of vitamins C and A. In addition a cup of pineapple contains calcium, magnesium, manganese and potassium.

Today I am going to share with you my favourite fast and easy breakfast. This recipe is perfect because you can prepare it the night before and enjoy it in the morning when you need a fast and easy meal. I usually make it when I have class at 9 am or when I have to catch an early morning flight. I love to prepare also my own homemade almond milk, but you can simply buy it , just make sure it doesn’t have any added sugars. I used also Chia seeds, which is a real Superfood, in fact it contains loads of minerals , such as : Manganese, Magnesium and Phosphorus. It is also very low in calories but rich in fiber and protein. 28 grams of Chia seeds contain 11 grams of fiber and 4 grams of protein.

This week I have been working on new creative recipes for you guys. Today I am going to share with you my healthy doughnuts. I tried this sweet treats for the first time at the Healthy Being Juicery in Jackson Hole (Wyoming, U.S.A) and I immediately felt in love with it. I tried to recreate it in my kitchen , and my favourite version of it is the one I am sharing with you today, made with coconut and raw cacao powder. I used cashew nuts because they are super healthy and delicious, cashew nuts contain the best fat ratio 1:2:1 for saturated, monounsaturated and polyunsaturated. These nuts are also a super good source of magnesium which helps to lower blood pressure and to fight muscle spasms and headaches.

Last week I have been really busy with my final exams that I had no time to elaborate new creative recipes. I had to prepare very fast and easy meals while studying, and I decided to share with you one of my favourite quick salad, which is super easy to make yet so yummy. I used organic and healthy ingredients like butternut squash, which is very good for you because it is low in calories but it contains a large amount of dietary fiber. It is a good source of potassium and vitamin B6, which helps to boost the immune system.

I love smoothies, I have mine everyday for breakfast with different fresh and organic ingredients. I personally think that fruits like banana or mango can really make your smoothies outragously delicious. Normally I also add some home made granola (the recipe will be posted soon) or some quinoa flakes. The recipe I’m sharing with you today is made with a spoon of spirulina powder, spirulina it’s a real superfood. It is naturally rich in protein : 60 grams of protein in 100 gr of Spirulina powder, more than half a pound of chicken breast!!! Spirulina also contains calcium, magnesium , potassium , vitamin B and iron.

Savory Crepes | Crepes Salate

Savory Crepes:

This are the most delicious savory crepes that I have ever tasted. The recipe is very fast and easy but healthy and delicious. I like to serve it with hummus and sun dried tomatoes, but it works perfectly with parma-ham or bresaola too. My recipe is a lighter version of the classic salty crepes, made with seasonal products like spinach, that from March to June are just so tasty and crunchy, I like to add them everywhere. Spinach are naturally very rich in iron, magnesium and potassium  and as many other vegetables are very low on calories. We need to include Iron in our diet because it is a very important mineral that helps the body to transport the oxygen through the organs.
