I know that after the Festive Season we all don’t feel like eating sweets, but this biscotti are so delicious that I really have to share the recipe with you guys. Now, that the holidays are over, and I have to go to school everyday, having my spiced cookies in the morning makes me feel positive and happy. I have recently moved to Berkeley, in California, which is the reason why I haven’t posted many recipes lately. In London, the porridge season has officially started. Even if I truly love to have a fresh smoothie in the morning, when the weather gets colder and the sky is grey, I’ll rather have a warm and cozy porridge packed with vitamins and minerals. For this porridge I normally use blueberries, raspberries and blackberries mixed together. Berries are a very good source of vitamin C, that will boost your Immune System.

I’m so excited to share with you the recipe for Meri’s healthy and delicious Carrot Cake made with fresh organic ingredients that you will love. I made this healthy version of a classic carrot cake for my brother’s friends and they all loved it, so I decided to share it with you and I hope you will love it too. I think is the perfect cake to prepare when you have friends or family coming over for dinner, maybe after my creamy broccoli and pea soup or my raw carrot noodles. Usually I like to sweeten my cakes or sweet treats with maple syrup because it has a sweet flavour, similar  to sugar, but a very low glycemic index. It contains also many vitamins such as : calcium, potassium, iron, manganese and zinc.
