Meri’s Nocciolata :
I have been working on this recipe for the past few weeks and now, that I am finally happy with the result, I’m going to share it with you. My Nocciolata is a lighter and healthier version of the classic Nutella and it is super delicious on its own or spread it on gluten-free toast and crackers. The main ingredient of my Nocciolata are organic hazelnuts, which are a great source of vitamin E and B and minerals such as: iron, calcium and potassium.

Classic Butternut Squash Soup :
Butternut Squash is my favourite veggie, I like to have it roasted, steamed, on my quinoa or mashed as a side of my veggie burgers. This is a very classic and simple recipe that I usually prepare when I have friends coming over for dinner, normally they prefer a squash or pumpkin soup to a boring green broccoli soup. Butternut Squash has a sweet taste so kids love it too, it’s seriously the best option for those people that are not fan of classic veggies. The health benefits of this veggie are several, firstly it has no fats and very low calories. It contains also many vitamins and minerals such as :vitamin A, vitamin C vitamin E, calcium, iron, copper and zinc. Butternut squash is the plant with the highest content of vitamin A which helps to maintain the integrity of skin and mucus and it’s a very powerful anti-oxidant.

The Benefits of Avocado :
Avocado is my favorite fruit, I truly love it and I can literally have it everyday with my quinoa, salads, veggie noodles, breakfast smoothie or simply on brown toast in the morning. Avocado is also called the alligator pear because it has a pear shape and its rid is very similar to the skin of an alligator. This amazing berry comes from Latin America and it was first brought to Europe from the Spanish “Coinquistadores” !!!

Butter Bean Salad with Creamy Spinach Dressing :
Yesterday I was wandering around Borough Market with my friend Isabela and I bought a few veggies without thinking too much about it, which is very rare because usually I do my grocery shopping with a very detailed list. I came home with a lot of spinach, pomegranates, tomatoes, carrots, avocados and walnuts. I simply combined a few ingredients together et voila my salad was ready, it took me ten minutes or less to prepare it , therefore this one is the perfect meal to prepare when you don’t have too much time our you are just too lazy to cook. I used spinach because it contains a lot of potassium and iron, that can really help you to stay active and feel energised, but most importantly potassium can really help to lower blood pressure. Spinach is also a very good source of vitamin A and vitamin C. Vitamin A keeps your hair soft and healthy, while vitamin C helps your body to build and maintain collagen.

The Benefits of Lemon :
I just love lemons, their juice has a very delicious and tasty flavour . I use them on top of almost everything, i love them on avocados and as a dressing on top of salads or as ingredients of my favorite juices. Lemon has a great taste and brings out the flavors of any kind of food. I love to start my day with lemon water on an empty stomach, because it has many amazing benefits that most are unaware of.
