Adri’s Veggie Arepas :
After a few weeks of break, I’m back on track and I can’t wait to share many new super yummy recipes with you guys. Since I came back from my Easter holidays, I have been really busy with school and I had no time to post on the blog any recipe or the pictures of my amazing Spring Break trip to Hawaii. Now that I have more free time I can’t wait to write many new posts for you. I will start with the recipe for the famous Arepas created by my lovely friend Adriana. Arepas are a typical Venezuelan dish made with corn flour and stuffed with different fillings like: cheese,vegetables, avocado or meat. To add more nutrients and taste to the arepas, we decided to combine the classic dough with spinach (green arepas), carrots (orange arepas), beetroot (pinky arepas) and black beans (purple arepas).

Alice’s Veggie Penne:
Today I’m sharing with you another of Alice’s super delicious plant-based recipe. This time she decided to prepare a true Italian dish made with whole spelt Penne and a super yummy veggie cream. I tried her recipe a few times and it works perfectly for a dinner with friends or family. The tahini makes the dish even more delicious and nutritious since it’s a really good source of vitamin and minerals, such as: iron, potassium and phosphorus , vitamin E and vitamin B.

My Favourite Detox Smoothie:
Today I am going to share with you another recipe with persimmons, here in California their season is almost over and I used the last ones I had in my kitchen, to make this fresh and nourishing smoothie. I combined the super sweet taste of persimmons with the strong taste of turmeric. Turmeric has been used in traditional Chinese and Indian medicine to fight infections and inflammations, turmeric is also a very potent antioxidant that can neutralise free radicals.

Last week, my lovely friend and photographer Christina, gave to me a big basket of organic persimmons from her boyfriend’s garden. Persimmon are my favourite Winter fruits as they are very sweet and juicy, therefore they are the perfect ingredient for cakes, compotes and smoothies. Persimmons are relatively high in calories, but very low in fat. These orange round fruits are also a really good source of Vitamins C, antioxidants and dietary fiber. I like to serve my Persimmons Cake for breakfast with a warm matcha tea or as a dessert combined with diary-free vanilla ice cream.

Meri’s Guide to LA:
Last weekend I had the chance to visit Los Angeles, which is located just 1 hour by plane from San Francisco. Los Angeles is probably the “healthiest” city in the US. In LA you can find plenty of restaurants serving plant-based and organic dishes, there are also many juice bars and yoga studios. Last weekend the weather was really nice and I went running every day with my brothers Giulio and Giacomo. If you have the chance to visit California then you have to go to LA and enjoy its amazing vibe.

The weather is getting colder here in Berkeley, and I am in constant need of nourishing and cozy meals. Everyday I am looking for different and fast recipes to prepare during my lunch breaks and this winter bowl is just perfect because you can cook the ingredients the night before and enjoy it the day after for lunch or dinner. This recipe is not only super delicious, but very rich in protein, carbohydrates, vitamins and minerals.

Strawberry & Coconut Smoothie:
Now that I moved to California and I don’t have to fight the cold English weather anymore, I like to start my day with a fresh and nourishing smoothie. In my smoothies I try to combine different ingredients and I always make sure to add a good source of healthy fats like coconuot yogurt. For this smoothie I used frozen strawberries but you can use also fresh strawberries and add 2 ice cubes. Strawberries are naturally rich in nutrients, antioxidants and phytochemicals that may help the body to prevent the effects of ageing, diabetes and high blood pressure.

Breakfast is my favourite meal, I love to start my day with a freshly squeezed lemon juice, a good workout, followed by a nourishing and sweet breakfast. At the moment I’m back home, in Italy, and I’m baking almost everyday a big variety of cakes and breads for my friends and family. This Pumpkin Focaccia is perfect for a sweet but healthy breakfast, because pumpkin is naturally rich in antioxidants vitamins such as: vitamin A, vitamin E and vitamin C.

Buckwheat Choco Bites:
I know I have been a little quiet lately but I really needed to spend some time off technology and social media. Today, I’m feeling energised again and I’m ready to share a new exciting recipe with you guys. This buckwheat and choco bites are gluten-free and plant-based and I like to serve them as a light dessert or as a mid morning snack or even for breakfast with my homemade cashew milk. Buckwheat is naturally free from gluten and it has a very low Glycemic Index; it’s also very high in protein and mineral content.
