I know I have been quiet for the past two weeks but I went back home for Easter and I couldn’t cook as much as I wanted too. I came back to London  a few days ago, and I moved to a new flat, which is simply perfect! My new kitchen is much better than the old one and today I finally started to cook again.

The recipe that I am sharing with you is very simple, you can prepare it in the morning and have it on the way to the office or to school.  I like to eat my smoothies with a spoon rather than drinking it but you can add a little bit of water to my recipe and it becomes immediately more liquid.

This is seriously my favorite fast and easy smoothie, I used pineapple, which is a really good source of vitamins C and A. In addition a cup of pineapple contains calcium, magnesium, manganese and potassium.

Today I am going to share with you my favourite fast and easy breakfast. This recipe is perfect because you can prepare it the night before and enjoy it in the morning when you need a fast and easy meal. I usually make it when I have class at 9 am or when I have to catch an early morning flight. I love to prepare also my own homemade almond milk, but you can simply buy it , just make sure it doesn’t have any added sugars. I used also Chia seeds, which is a real Superfood, in fact it contains loads of minerals , such as : Manganese, Magnesium and Phosphorus. It is also very low in calories but rich in fiber and protein. 28 grams of Chia seeds contain 11 grams of fiber and 4 grams of protein.

Butternut Squash has a sweet taste so kids love it too, it’s seriously the best option for those people that are not fan of classic veggies. The health benefits of this veggie are several, firstly it has no fats and very low calories. It contains also many vitamins and minerals such as :vitamin  A, vitamin C vitamin E, calcium, iron, copper and zinc. Butternut squash is the plant with the highest content of vitamin A which helps to maintain the integrity of skin and mucus and it’s a very powerful anti-oxidant.
