Meri’s Halloween Treats:

Trick or Treat ? Well the answer is quite simple : Plant-Based and Gluten-Free treats please !!! This chocolate treats are just so easy to make yet delicious and indulgent, my family loved it so much that I had to share the recipe with you guys. For my Halloween chocolate sweets I used coconut nectar mainly because it has a very low Glycemic Index, precisely 35, compared to white sugar that has a Glycemic Index of 65. Coconut Nectar is also a very good source of amino acids and important minerals, such as: iron, potassium, magnesium and zinc.

Banana and Cacao Smoothie :

Now that the weather is getting colder I prefer to nourish myself with cozy and sweet meals like my Warm Berry Porridge. But sometimes I wake up later than usual and I have to prepare a quick breakfast before running to work or to school. I simply love this banana and cacao smoothie because it has a very “chocolatey” taste, sometimes I even prepare it in the afternoon when I need a quick and healthy snack. I added also some almond butter which is a wonderful source of plant-based protein and vitamin E, that will make your skin glow.

Broccoli and Lentil Burger :

This is a quick healthy and vegan alternative to the classic beef burger. I made it with broccoli but you can also use courgette, carrots or cauliflower. I like to serve this dish with some sliced avocado and a little bit of tahini on top. I used lentils because they have many health benefits, its high level of soluble fiber can help to reduce cholesterol, improve the digestive system and lower the risk to develop heart diseases. In addition lentils contains a super high level of protein and  very low calories, therefore this dish represents a super light and fulfilling meal.

Carrot Noodles with Avo Cream : 

This recipe is a healthier substitute of noodles or spaghetti as it is gluten-free, carbs-free and of course guilt-free. Is very easy to prepare it and trust me is just a super delicious dish. I simply love the combination of the natural sweetness of carrots with the creamy taste of avocado.  I literally adore Avocado because it has so many benefits that most are unaware of. First of all Avocado is a low-carb food with a high source of fiber and vitamins such as : vitamin K, vitamin C and vitamin B. Most importantly it is a source of Omega-9 which helps to repare damaged cells and it makes your skin healthy, soft and beautiful.

Kale Crisps :

This is a perfect potato chips substitute, I usually love to eat it as a snack or simply as a side, you can also serve it as a healthier aperitif, maybe with a fresh juice. I like to use a lot of cinnamon for this recipe, trust me on this one: the combination of the sweet taste of cinnamon with the bitterer kale is just amazing, plus cinnamon is really good for you, because it’s rich in anti-oxidants and helps to reduce blood sugar levels.

I will start by saying that I truly love kale, is when of my favorite recipe and it is super healthy, kale is in fact considered a super food. It contains many vitamin A, C and K and many minerals, such as : potassium, iron, manganese and phosphorus.

This salad is super fast and delicious, you can have it as a side or as main course if you want to have a lighter but still nutritious lunch.

Sweet potato is a very good source of carbohydrate, this recipe is a perfect and balanced lunch , remember that is better to have carbohydrate for lunch than for dinner, because it gives you a lot of immediate energy and it makes you feel good for the rest of the day. Sweet Potato is the root vegetable with the highest level of beta-Carotene and is super rich in antioxidants.
