Meri’s Guide to LA:
Last weekend I had the chance to visit Los Angeles, which is located just 1 hour by plane from San Francisco. Los Angeles is probably the “healthiest” city in the US. In LA you can find plenty of restaurants serving plant-based and organic dishes, there are also many juice bars and yoga studios. Last weekend the weather was really nice and I went running every day with my brothers Giulio and Giacomo. If you have the chance to visit California then you have to go to LA and enjoy its amazing vibe.

Broccoli, Courgette and Mint Soup:
I am a very big fan of soups, whenever I have guests coming over for dinner I serve a nourishing and tasty soup as a starter followed by my healthy version of a classic Greek salad or by my signature veggie frittata. This green soup is very easy to prepare and I personally love to add fresh mint leaves to make it more tasty and delicious. Broccoli are a very good source of vitamin K and A, that combined can help the body to keep the vitamin D metabolism in balance. In addition broccoli are very high in vitamin C, that can really help to fight skin damage caused by pollution and sun exposure. I like to serve this soup with a delicious cashew cream which makes it even more rich and tasty.

Farm Girl Cafe:
For the past 2 months I have been working so much on creating new delicious recipe for you guys, that I have completely forgot to share one of my new favourite healthy spots in London. Farm Girl Cafe it’s a lovely cafe located in Portobello Road, Notting Hill. Rose, who is Australian and Anthony who is Austrian, have opened Farm Girl this Summer and their having an enormous success. I met Rose, just a few weeks before she was going to open her little cafe, with her cute frenchie Bronte (Goji’s best friend). Bronte loves to hangout at Farm Girl and you can spot her very often running around Portobello Road or simply sleeping next to the armchairs at Farm Girl.

Choco Popcorns :
This is probably the easiest recipe that I have ever posted. My choco popcorns are a very healthy and delicious treat, I like to serve them as a dessert, or when I invite all my girlfriends for a movie night. To cook the popcorns I used coconut oil because of its smoke point, which is much higher than olive oil. Therefore, coconut oil can maintain most of its vitamins and mineral at very high temperature.

I created this delicious granola recipe for my grandma this Summer, and she loved it so much that I have to prepare it for her at least once a month. This granola is very simple to prepare and it is made of a few simple ingredients like oats, nuts and seeds and coconut blossom syrup. For this granola I also used coconut oil, to make it more crunchy and full of healthy fats. Coconut oil is also a very important source of vitamins and minerals, such as: vitamin E, vitamin K and iron.

Banana and Cacao Smoothie :
Now that the weather is getting colder I prefer to nourish myself with cozy and sweet meals like my Warm Berry Porridge. But sometimes I wake up later than usual and I have to prepare a quick breakfast before running to work or to school. I simply love this banana and cacao smoothie because it has a very “chocolatey” taste, sometimes I even prepare it in the afternoon when I need a quick and healthy snack. I added also some almond butter which is a wonderful source of plant-based protein and vitamin E, that will make your skin glow.

Quinoa and Pistachio Burgers:
I create this recipe by accident when I had 6 friends coming over for dinner. I wanted to prepare a quinoa salad with a vegan pesto made with pistachio nuts and basil leaves, but the quinoa was extremely sticky so I thought to turn it into burger patties. I love quinoa especially because it is a very good source of plant-based protein, vitamin B and magnesium. This super grain is also free from gluten, therefore it’s perfect if you have a sensibility to gluten or if you just want to avoid it.

Avo and Mozzarella Sticks :
Whenever I invite friends over for dinner I don’t want to prepare just vegan and super healthy meals, I try to always come up with new creative recipes for them. Most of my guests are not very into healthy eating so I avoid serving “boring” salads or vegan dishes. The recipe I’m sharing with you today is perfect as a delicious starter, maybe followed by my healthy lentil burgers.

To celebrate International Hummus Day I decided to share with you one of my favourite recipe : my healthy hummus.I personally adore hummus because it is so tasty yet fast and easy to make. The best thing about this recipe is that you can keep it in the fridge for 4-5 days which makes it a perfect snack or light lunch. My hummus is mainly made of chickpeas which are really high in plant-based proteins, therefore this is a perfect dish for vegetarians or vegans. Chickpeas are also a good source of fiber, that can really improve the digestive system and can help the body to flush out the toxins.
