Broccoli, Courgette and Mint Soup:

I am a very big fan of soups, whenever I have guests coming over for dinner I serve a nourishing and tasty soup as a starter followed by my healthy version of a classic Greek salad or by my signature veggie frittata. This green soup is very easy to prepare and I personally love to add fresh mint leaves to make it more tasty and delicious. Broccoli are a very good source of vitamin K and A, that combined can help the body to keep the vitamin D metabolism in balance. In addition broccoli are very high in vitamin C, that can really help to fight skin damage caused by pollution and sun exposure. I like to serve this soup with a delicious cashew cream which makes it even more rich and tasty.

Crumble is one of my favourite desserts, because it’s made of just a few healthy ingredients and it is super easy to prepare. I had my first peach crumble when I was a kid in a restaurant called Pinnacle Peak (California), and I felt in love with it. Unfortunately, in Europe you can only find very unhealthy crumbles made with white sugar and white flour. I really enjoy a good workout early in the morning. I usually go for a spin or pilates class or for a jog in the park, it makes me feel very good and energised for the entire day. In winter I normally prepare a good porridge before my workout but since the weather has been so nice I switch to fresh and easy smoothies. For this smoothie I added spinach as it is rich in iron, vitamin K, vitamin A, calcium and potassium. Spinach can really improve the quality of our blood and our vitality.

I love to have quinoa for lunch, because it is a healthy and well-balanced meal. I personally prefer white quinoa but you can use also red or black quinoa, which is usually more crunchy. I love smoothies, I have mine everyday for breakfast with different fresh and organic ingredients. I personally think that fruits like banana or mango can really make your smoothies outragously delicious. Normally I also add some home made granola (the recipe will be posted soon) or some quinoa flakes. The recipe I’m sharing with you today is made with a spoon of spirulina powder, spirulina it’s a real superfood. It is naturally rich in protein : 60 grams of protein in 100 gr of Spirulina powder, more than half a pound of chicken breast!!! Spirulina also contains calcium, magnesium , potassium , vitamin B and iron.

There are two Daylesford restaurants in London, one is located in Pimlico and the other one in Notting Hill. The organic and fresh products cooked and served in the restaurants are grown and daily delivered from their farm in Gloucestershire. Avocado is my favorite fruit, I truly love it and  I can literally have it everyday with my quinoa, salads, veggie noodles, breakfast smoothie or simply on brown toast in the morning. Avocado is also called the alligator pear because it has a pear shape and its rid is very similar to the skin of an alligator. This amazing berry comes from Latin America and it was first brought to Europe from the Spanish “Coinquistadores”  !!!
