Butternut Squash and Sweet Potato Soup:

Autumn is probably one of my favourite season , mainly because I love how quickly the leaves turn red, orange and yellow. In Autumn I like to take long walks in the park and buy organic vegetables from the local farmer’s market. My favourite fruits and vegetables of this season, are : butternut squash, sweet potato and apples. The recipe I’m sharing with you today has a very high content of vitamins, such as: vitamin A, vitamin B and vitamin C. Butternut squash and sweet potatoes are also a good source of magnesium and potassium.

Here in Italy I have a nice garden where my father grows loads of veggies and aromatic plants like mint and rosemary. Since I truly adore fresh mint I love to add it to every single dish or to my iced drinks. When I need inspiration for my recipes, I like to walk trough our garden and pick random vegetables, then I try to combine them together and create new healthy dishes. Yesterday I decided to cook our aubergines with apricots and fresh mint, I loved it so much that i decided to share the recipe with you.

Whenever I invite friends over for dinner I don’t want to prepare just  vegan and super  healthy meals,  I try to always come up with new creative recipes for them. The Easiest Lentil Salad :

This is one of my favourite fast and easy recipe. I normally prepare it when I travel and I don’t want to eat airplane food, which is full of preservatives and not very tasty. Lentils are very rich in soluble fiber that can really help to improve the digestive system and to lower cholesterol levels. In addition lentils are also a very good alternative to animal products, as they are a very good source of plant-based proteins.

I really enjoy a good workout early in the morning. I usually go for a spin or pilates class or for a jog in the park, it makes me feel very good and energised for the entire day. In winter I normally prepare a good porridge before my workout but since the weather has been so nice I switch to fresh and easy smoothies. For this smoothie I added spinach as it is rich in iron, vitamin K, vitamin A, calcium and potassium. Spinach can really improve the quality of our blood and our vitality.

To celebrate International Hummus Day I decided to share with you one of my favourite recipe : my healthy hummus.I personally adore hummus because it is so tasty yet fast and easy to make. The best thing about this recipe is that you can keep it in the fridge for 4-5 days which makes it a perfect snack or light lunch. My hummus is mainly made of chickpeas which are really high in plant-based proteins, therefore this is a perfect dish for vegetarians or vegans. Chickpeas are also a good source of fiber,  that can really improve the digestive system and can help the body to flush out the toxins.

Avo and Broccoli Quinoa Salad :

I love to have quinoa for lunch, because it is a healthy and well-balanced meal. I personally prefer white quinoa but you can use also red or black quinoa, which is usually more crunchy. This recipe contains a good ammount of carbohydrates , proteins and healthy fats. I usually prepare it wen I’m travelling as it is very easy to carry and very satisfying too. Quinoa is a really good source of vitamins and minerals and it contains also the 9 essential amino acids that our body can’t produce, therefore it is a plant-based complete protein.

Broccoli and Lentil Burger :

This is a quick healthy and vegan alternative to the classic beef burger. I made it with broccoli but you can also use courgette, carrots or cauliflower. I like to serve this dish with some sliced avocado and a little bit of tahini on top. I used lentils because they have many health benefits, its high level of soluble fiber can help to reduce cholesterol, improve the digestive system and lower the risk to develop heart diseases. In addition lentils contains a super high level of protein and  very low calories, therefore this dish represents a super light and fulfilling meal.

The Benefits of Avocado :

Avocado is my favorite fruit, I truly love it and  I can literally have it everyday with my quinoa, salads, veggie noodles, breakfast smoothie or simply on brown toast in the morning. Avocado is also called the alligator pear because it has a pear shape and its rid is very similar to the skin of an alligator. This amazing berry comes from Latin America and it was first brought to Europe from the Spanish “Coinquistadores”  !!!
