Adri’s Veggie Arepas :

After a few weeks of break, I’m back on track and I can’t wait to share many new super yummy recipes with you guys. Since I came back from my Easter holidays,  I have been really busy with school and I had no time to post on the blog any recipe or the pictures of my amazing Spring Break trip to Hawaii. Now that I have more free time I can’t wait to write many new posts for you. I will start with the recipe for the famous Arepas created by my lovely friend Adriana. Arepas are a typical Venezuelan dish made with corn flour and stuffed with different fillings like: cheese,vegetables, avocado or meat. To add more nutrients and taste to the arepas, we decided to combine the classic dough with spinach (green arepas), carrots (orange arepas), beetroot (pinky arepas) and black beans (purple arepas).

My Favourite Detox Smoothie:

Today I am going to share with you another recipe with persimmons, here in California their season is almost over and I used the last ones I had in my kitchen, to make this fresh and nourishing smoothie. I combined the super sweet taste of persimmons with the strong taste of turmeric. Turmeric has been used in traditional Chinese and Indian medicine to fight infections and inflammations, turmeric is also a very potent antioxidant that can neutralise free radicals.

I came back from Costa Rica one week ago and I had to fly immediately to London to celebrate my graduation in International Business at Hult Business School. I promise that I am going to share with you a post dedicated to my adventures in Costa Rica very soon.  While I was in London celebrating my graduation with my family, I had the chance to taste a super delicious energy bar in a little vegan restaurant in Notting Hill, I try to recreate it in my kitchen and here’s the recipe for you. It is made of nuts and seeds which are both a really good source of plant-based protein and gluten-free oats which are a really good source of carbs.

This is one of my favourite fast and easy recipe. I normally prepare it when I travel and I don’t want to eat airplane food, which is full of preservatives and not very tasty. Lentils are very rich in soluble fiber that can really help to improve the digestive system and to lower cholesterol levels. In addition lentils are also a very good alternative to animal products, as they are a very good source of plant-based proteins.

To celebrate International Hummus Day I decided to share with you one of my favourite recipe : my healthy hummus.I personally adore hummus because it is so tasty yet fast and easy to make. The best thing about this recipe is that you can keep it in the fridge for 4-5 days which makes it a perfect snack or light lunch. My hummus is mainly made of chickpeas which are really high in plant-based proteins, therefore this is a perfect dish for vegetarians or vegans. Chickpeas are also a good source of fiber,  that can really improve the digestive system and can help the body to flush out the toxins.
